A Love Note to Cortney – and Vegan Potato Pizza

My favorite person in the entire world might be coming to visit me this fall. She’s a little nervous about it (new things are scary – don’t judge her!), so this post is to help encourage her. She’s probably the only one that will read it, and I don’t even care.

Last night I told her I would cook her delicious food for her every single day she’s visiting (I think she’s staying for 2-3 weeks). Her timid response was, “But what if I’m vegan?”

What?!

Cortney – I will love you no matter what your eating choices! And I will learn how to cook all the delicious vegan food for you. Starting with this fucking pizza! We will make it together, while listening to Over the Rainbow, and practicing yoga poses in the kitchen.

She also asked if we could go for a walk in the forest. I was like, “Sure… but we’ll have to drive to a forest.” Her response?

“Can we drive to a forest?”

Fuck yes we can drive to a forest! And we’ll hike the shit out of it. Cortney says she loves hiking, but not serious hiking. She likes what she refers to as ,”Michelle Obama hiking.” That basically means she likes to walk on flat land, while looking really cute, and not breaking a sweat. I love her so much.

It should be mentioned that Cortney is from Hawaii, the greatest place in the world. Seems fitting, since she’s the greatest person in the world.  Everyone cross your fingers for me that this visit actually happens. Because we will have so much fun exploring Minnesota together! We’ll go to Minnehaha Falls, Stillwater, and even Duluth! I’ll take her fucking Michelle Obama hiking on the shores of Lake Superior! She will be appalled at the temperature of the water, and it will be hilarious.

Cortney – don’t forget to bring me some mochi. Also, you owe me an email. xoxo

Potato Pizza (originally found on Smitten Kitchen)

Half of the pizza dough recipe

3-4 potatoes (I used yellow potatoes), sliced as thin as you possibly can

1/4 of a large onion, chopped

4-5 tablespoons of olive oil (I honestly didn’t measure this)

1 tablespoon rosemary, chopped

2 teaspoons salt

Salt and pepper

Preheat oven to 500 degrees. Fill a large bowl with about a quart of luke warm water. Mix in the 2 teaspoons of salt until fully dissolved before adding the potatoes. Let soak for 40 minutes (or overnight because you got way too drunk to assemble this shit). Pour potatoes into a strainer, and squeeze out as much water as possible. Then lay them on a bed of paper towels for a few minutes. In another large bowl, add onions and potatoes. Toss with salt, pepper, and a generous splash of olive oil. Brush the pizza dough with olive oil, then top with the potato/onion mixture. Make sure to layer evenly, adding thicker layers of potato closer to the edges. Sprinkle with rosemary and bake for 25 – 35 minutes.

I tried adding cheese to this… it didn’t make it better.

Shove the whole thing in your face and go frolick with your best friend.
